Onion 1 (medium)
Ginger-garlic paste 1/2 tsp
Green chilies 1
Drumstick(mulankada) 1 (peeled and cut into pieces)
Raw plantain(aritikaya) 1(peeled and cubed)
Egg plant(vankaya) 2 (cut into pieces)
Broad beans(Chikudukaya) 5 (nip the ends and cut into pieces)
Sweet Potato 1 (washed and cubed)
Pumpkin(gumidikaya) 1 cup(peeled and cubed)
Chilly powder 1 tsp
Salt as needed
Oil 1 tsp
Mustard seeds 1/2 tsp
Cumin seeds 1/2 tsp
Curry leaves 1 sprig
1)In a pressure cooker , heat oil and then add the tempering .
2)Now add the onion once it turns transparent then add the green chilies , ginger-garlic paste and curry leaves.
Saute for 1 minute.
3)Add the tomatoes , let them turn mushy then add all the vegetables to it.
Saute for 5 -7 minutes so that the vegetables cook well ( vegetables reduce in volume almost to half and water comes out of the vegetables)
4)Then add the chilly powder, salt and little enough to wash your hand (1/2-3/4 cup)
Close the lid and wait for 1 whistle.
5) Turn off the heat .Open the lid and check for water. If there is lot of water in the curry then cook the curry in low flame until the water disappears.
Turn off the heat and serve with coriander leaves.
SERVE WITH STEAMED RICE.
