Wheat flour 2 cups
Salt as needed
Ghee 1/2 tsp
/vammu 1 tsp
Oil for deep frying
1) Put the flour,salt ,carom seeds and ghee in a large bowl, mix in enough water to make a pliable dough.
2) Knead well on a lightly floured work surface for about 5 minutes, then transfer to a lightly oiled bowl, cover with damp cloth and set aside for 30 minutes.
3)Knead the dough again, then divide into small lime-sized balls.
4)Roll each ball out on a lightly floured work surface to a round.
5)Heat the oil in a heavy based pan. To check the temperature of the oil put a bit of bread and it must brown quickly.
6)Now carefully add the pooris to the hot oil and deep fry for 1-2 minutes or until puffed up and pale golden brown.
7)Remove aside and drain on a kitchen paper.
Serve hot with some potato curry.
