Artikaya/ raw plantain 1
Mustard seeds 1 tsp
Cumin seeds 1 tsp
Onion 1/2 (slit length wise)
Curry leaves 1 sprig
Salt as needed
Chilly powder 1 tsp
Besan/chickpea flour 2 tsp
Sambar powder 1 tsp
Garam masala powder 1/2 tsp
1)Cut the aritikaya/raw plantain and place the pieces in some water to prevent it from getting dark.
2)Boil some water and then add the plantain pieces to the water . Close the lid and let them cook for 3-4 minutes. Strain the water and keep aside.
3)Add salt,chilly powder, sambar powder, besan/chickpea powder and garam masala to the boiled pieces.Mix well .
4)Heat oil in a pan, add mustard seeds once they splutter add cumin seeds , onion and curry leaves.
Sought until the onion turns transparent then add the ginger-garlic paste.
Fry till raw smell leaves .(approx 1-2 min)
5)Add the marinated pieces to it. Mix well .
Let it cook for 5 minutes keep stiring in between making sure not to brake the pieces.
Check for the pieces the raw smell of the besan/chickpea flour should leave and the piece should be cooked .
If the pieces did not get cooked close the lid and cook on low flame until it is done.
If the raw smell din't leave the pieces fry for some more time .
Once done garnish with coriander leaves and serve with sambar and rice.
