KANDA POHA


INGREDIENTS::
Poha/Attukulu(thick)                                 2 cups
Potatoes(boiled and cubed)                     1 big
Onion                                                        1 
Green chilies                                             4
Curry leaves                                              1 sprig
Lemon juice                                              1/2 lemon
Peanuts                                                      2 tsp(roasted)
Turmeric powder                                      1/2 tsp
Salt                                                          as needed
Oil                                                           1 tsp
FOR TEMPERING::
Mustard seeds                                           1/2 tsp
Cumin seeds                                              1/2 tsp
Chana dal                                                  1/2 tsp
Urad dal                                                    1/2 tsp

PROCEDURE::
1)Wash the attukulu/poha. Then soak the attukulu in water for 2 minutes(aprox..). Drain the water and keep aside. 
2)Heat oil in a pan, then add the mustard seeds, let them splutter then add the cumin seeds, urad dal and chana dal. Saute for 1 minute.
Add the roasted peanuts , onion ,green chilies and curry leaves.

3)Saute until the onions turn transparent .Now add the potatoes and fry for 2 minutes.
4)Add the salt, turmeric and toss well.
5)Finally add the soaked poha/attukulu  in the pan .

Mix well and cook for 3-4 minutes. Add the coriander leaves.
Turn off heat, squeeze the lemon juice and serve.

**If using thin poha , wash and immediately drain the water. Or else it will become mushy.
