METHI MATAR PULAO



INGREDIENTS::
Methi leaves                             1bunch
Green peas                               1/4 cup
Basmathi Rice                           2 cups
Water                                       33/4 cups
Sugar                                         1 tsp
Cardamom                                8-10
Salt                                           as required
Ghee                                        2 tsp
Onion                                        1 
Ginger-Garlic paste                    1/2 tsp
(4-5)Green chilies paste              1/2tsp(Adjust)
Whole Garam Masala::
Bay leaf                                      1
Cloves                                        4
Star anise                                   1
1" Cinnamon                               1

PROCEDURE::
1)Wash the basmathi rice and drain. Keep aside.
2)In a bowl take the methi leaves and sugar.Let it soak for 15 -20 minutes.Then squeeze the leaves to remove the bitterness.

3)Now in a pan add the ghee , once it melts then add the items under whole garam masala .
Add the onion, saute till they turn transparent.

Then add the  ginger-garlic and chilly paste. Mix well and then saute for 1 minute.
4)Now add the methi leaves and sugar .

saute for 4-5 minutes.( The leaves change their color and reduce in size)
Add the green peas then. 
5)Finally add the drained rice .Saute for 2-3 minutes.

6)Now add the water and salt , bring to boil. Cover the lid and cook until the rice is done.

Reduce the flame to low so that the rice gets cooked properly.

                                 SERVE WITH RAITA
