ALOO CHAAT


INGREDIENTS::
FOR MARINATING POTATOES::
Aloo/Potatoes                                   11/4 cups(boiled,peeled and cut)
Oil                                                     3 tbsp
Chili powder                                      1 tsp
Coriander powder                             1 tsp
Cumin powder                                   1 tsp
Turmeric powder                                1/4 tsp
Dry mango/Amchur powder                2 tsp
Besan(bengal gram flour)                     2 tsp
Coriander /Cilantro leaves                   2 tbsp

OTHER INGREDIENTS::
Fresh thick curd                                 1/2 cup(whisked )
Green chutney                                    4 tsp
Sweet chutney                                    2 tsp
Cumin seeds powder                          1-2 pinch
Chili powder                                       2 pinches
Sev                                                     4 tbsp

FOR GARNISH
Coriander/cilantro                               2 tbsp

PROCEDURE::
MARINATING POTATOES::
1)Combine chili powder, coriander powder,cumin powder,turmeric powder,dry mango powder, besan, salt coriander and 2 tbsp oil in a bowl and mix well.













Finally add the boiled ,cut potatoes to the mixture and marinate for 5-7 minutes.

2)Heat the 1 tbsp oil in a non-stick and then add the marinated potatoes, mix well and cook on a medium flame for 3-4 minutes.Keep aside.
  

FOR SERVING::
1)Place 1/2 the marinated potatoes in a plate and top with 1/4 cup whisked curd, 2 tsp green chutney, 1 tbsp sweet chutney.
2)Sprinkle a pinch of  cumin powder and chili powder and 2 tbsp sev.

Garnish with few finely chopped coriander leaves.
