VANGI BATH




INGREDIENTS::
Cooked rice                            2 cups
Brinjal/Egg plant                   1 big Or 6-7 small
Onion                                     1 medium
Cashew nuts                           5-6
Curry leaves                           1 sprig

Cumin seeds                           1 tsp
Coriander leaves                     2 tsp(for garnish)
Oil                                          1 tbsp
Salt                                         as needed

FOR THE MASALA POWDER::

Urad dal                                    11/4 tsp
Chana dal                                  2 tsp
Red chilies                                3(adjust)
Coriander seeds                        1 tsp
Peanuts                                     6-7
Dry coconut                              2 tsp
Sesame seeds                           1/4 tsp
Asefotide                                  a pinch

                                       

PROCEDURE::
1)Dry roast the urad dal, chana dal, red chilies, coriander seeds and peanuts in a pan.
Saute until the dals change color.
2)Now add the dry coconut, sesame seeds and asafoetida to it and turn off the heat..
Let them cool off.

3)Now in a blender add the roasted dals and grind them into fine powder.
Keep aside.

4)Cook the rice and keep aside.
5)Heat oil/ghee  in a pan,then add the onion, cashew nuts and curry leaves.
Saute until they turn golden brown.
6)Add the chopped eggplant/brinjal pieces to the tempering. Cover the lid and let it cook .
The pieces become tender and ooze out water.Once then pieces reduce in size , they are cooked.



7) Now add the prepared spice mix to the pieces.
Mix well and then add the cooked rice to it.

Combine well and then saute for 4-5 minutes on medium flame. 
Finally add the coriander leaves.
Turn off heat and then serve with papad.
