Beerakaya/ridge gourd is the delicious veggie mostly used for fries or dals.
But we always trash the peel of it. My mom always makes pachadi/chutney out of the peel  that is divine with a dollop of ghee and rice.Just try this and i bet you will never trash the peels.


Beerakaya thokalu(ridge gaurd peel)                     1 cup
Green chilies                                                           4(adjust)
Chana dal                                                                1 tbsp
Cumin seeds                                                            1 tsp
Garlic cloves                                                           2
Tamarind pulp                                                         1 tsp
Salt                                                                           as required
Oil                                                                             2 tsp


Mustard seeds                                                         1 tsp
Chana dal                                                                1 tsp
Red chilies                                                              2
Curry leaves                                                            1 sprig
Oil                                                                           1 tbsp


1) Peel the beerakaya/ridge gourd . Wash the peel thoroughly.
2)Add oil in a pan. Then add the peel to the oil and fry until the peel turns into dark color.
Take aside.

3)Now add 1 tsp of oil and then add the cumin seeds, chana dal and garlic cloves.
Once the garlic cloves turn into gold color then add the green chilies.
4)Cool down the ingredients.
5)Take them into mixer add salt and tamarind pulp to it.
Grind them into coarse paste by adding 3-4 tbsp water.

6)Heat oil in a pan. Then add the mustard seeds, chana dal, red chilies and curry leaves.
Add the tempering to the chutney/pachadi .

Enjoy with hot rice and dollop of ghee.
