COCONUT BURFI
Coconut burfi , I think most us remember our childhood . My mom used to make it . Specially at the time of the pooja season, when there are lots of coconuts pilled up in the house. She used to make two different varieties of burfis. One which I gave below and the other version is she used to fry shredded coconut in ghee along with jaggery. Then she used to make ladoos out of the mixture. Very yummy. We call it kobbari lasku. I will post that soon .
This coconut burfi is white burfi which is very easy to make. A savior for quick lunches and family poojas. I made just 6 burfi. As, none of my family have sweet tooth.
INGREDIENTS:
Grated coconut 1/2 cup
Sugar 1/2 cup
Ghee 1/2 tsp
Cardamom powder 1 tsp
Roasted gram 1 tbsp
PROCEDURE
1) Grate the coconut and keep aside. I used shredded coconut.
2) Grease a tray and set aside.
3) Take a pan. Add shredded coconut and sugar. Mix well.
4) Cook until the sugar melts and the mixture becomes watery.
Keep stirring frequently. Once the mixture starts leaving the pan you can see the mixture to be a little bubbly.
If the color changes it cannot form into burfi. So make sure that the color doesn't change.This is the easiest way to recognize the burfi consistency.
5)Add the cardamom powder and roasted gram. Mix once and turn off.

6) Quickly pour the mixture onto the greased pan. Smooth en the top layer .Mark the pieces and let it stand until it is hardened .
