GARLIC CHUTNEY
Chutneys are the soul of chaat recipes. I use the ready made store bought chutneys every time. Garlic chutney is used in Dabeli and bhel puri.. Garlic chutney has strong and raw flavor. Garlic has many medicinal properties . Garlic lowers blood sugar levels, regulate blood pressure, decreases the risk of cardiovascular disease when taken raw. Garlic is considered to be one of the healthiest food . But many people avoid garlic just for the fact that we have to work on our breath after we have it.
I never knew what went into chaats and street food before I moved out of the country. As, most of the time the places I lived hardly had any Indian stores . I really got to know the real things that go into the chutneys. I have already posted the sweet chutney recipe . I used red chilies for the chutney but we can swap them with 1 tbsp of red chilly powder for instant chutney. I made the chutney for dabeli. I will post the recipe soon for dabeli. INGREDIENTS:
Garlic cloves 6
Dry red chillies 5
(or)
Dry red chilly powder 1 tbsp
Salt as needed
Lemon juice 1 tsp
PROCEDURE:
1) Peel the garlic cloves and roughly chop them.
2) Soak the red chilies in hot water for 10-15 minutes.
3) Chop the lemon and squeeze the lemon juice.
4) Now blend garlic cloves, soaked red chillies (or) red chilly powder , lemon juice and salt together into smooth texture . Add little water if needed.
Enjoy the garlic chutney along with dabeli or bhel puri
