BOONDI LADOO



INGREDIENTS::
Besan                                           4 cups
Red food color                             1 pinch
Green food color                          1 pinch
Raisins                                         8
Cashew nuts                                 10 (broken into pieces)

Ghee                                             1 tblsp
Cardamom powder                       1 tsp
Rose water                                   1/2 tsp
Sugar                                            4-6 cups (adjust to sweetness)
Water                                            as needed

PROCEDURE::
1)Sieve the besan.
Mix besan with water making sure to avoid the lumps.
The batter should not be too thick or thin.
Add a little bit of oil(1 tbsp) to it.
The batter when we are mixing should be fall little lazily.
Add yellow food color to the besan mix, if u want to get good color.


2) Heat oil in a pan for deep frying. Now add a droplet of besan to the hot oil it should float to the top of the pan immediately.
If it takes some time let the oil heat for sometime.
If the besan becomes dark immediately reduce the heat.

3)Now add a ladle full of besan on to the big slotted ladle. Now using the other ladle rub the batter properly on the slotted ladle so that the boondi spreads evenly  in the oil.
Make sure to place the ladle 6 inches from the oil (becareful not to burn your body).
If the ladle is to close to the oil the boondi forms tails.
4) Clean the ladle every time , to get perfect boondi.
Don't fry the boondi too long , it will become crisp so make sure to remove the boondi after the rawness leaves it. 
5) Now take batter in 2 different bowls. And mix a pinch of red food color in 1 bowl and then add pinch of green food color to the other bowl.
6)Mix well and then set the batters aside and the repeat the same process for boondi.
7)Now heat ghee in a pan , fry the cashew nuts and raisins until the raisins increase in shape.
Keep aside.
8) Take sugar in a pan, then add water enough to immerse the sugar. Boil till 2 strings consistency.
Check the consistency  by taking a bowl of water and then pour the syrup in it, it doesn't dissolve and we can gather the syrup between the fingers.  Now add little rose water and cardamom powder. Take the syrup aside. 



9)Now add dry fruits to the boondi . Slowly add the sugar syrup to the boondi adjusting the sweetness to the boondi. Add sugar syrup according to your desired sweetness.
Make the ladoos when the syrup is warm so that we can get the ladoos shape well.


10) Take desired amount of boondi in your hand .  Squeeze and roll them into balls. When we are squeezing the syrup oozes out of the ladoos. Press it tight and set aside . The sugar syrup solidifies as the ladoo cools down and hold the ladoo.


* Make ladoos when the syrup is warm, it gives a better shape and holds the ladoo.
