SIMPLE EGG FRY
Eggs are my saviours . When my mind is blank thinking what to cook 😇I simply go with eggs. We can make tons of stuff with eggs. Be it a simple boiled form, scrambled eggs,omelette, curries, fries , Biryani what not . Today I made sambhar and this simple egg fry tastes so good along with it. And this recipe is no rocket science. I use more onions in the recipe as they give nice crunch and flavor to the eggs. On the other side this can be made very quick. I boil eggs on one side and on the other I fry the onions . So, lets note down the ingredients and start cooking.
INGREDIENTS:
Eggs 4
Onions 2
Oil 2 tbsp
Salt as needed
Chilly powder 1tbsp
Garam masala powder 1 tsp
Ginger-garlic paste 1 tsp
Curry leaves 4 no.
Tomato 1
Spring onions 2 (green part)
PROCEDURE:
1)Boil the eggs. Peel the shell and make small slits vertically.
2) Chop the onions lengthwise. Wash the spring onions and chop the green part .
3) Add 2 tbsp oil in the pan. Now add the boiled eggs , salt and chilly powder .
Fry till the eggs turn a little golden brown. Keep aside.

4) Now add the chopped onions. Fry till they are transparent.
Add the ginger-garlic paste. Mix well and fry for few seconds.
5) Add the chopped tomato , chilly powder and garam masala powder.
Cover the lid and cook until the tomatoes become mushy.
6) Finally add the fried eggs and chopped green onion.
Mix well and turn off the flame.
Serve the eggs with nice sambar and rice. Enjoy !!
