BRINJAL COCONUT FRY


INGREDIENTS::
Brinjal/egg plants                 10
Turmeric powder                  1 tsp
Tamarind extract                  1 tsp
Sambar powder                    1 tbsp
Coriader leaves                    for garnishing

Salt                                       as needed

FOR GRINDING::
Coconut grated                     5 tbsp
Green chilies                        2
Cumin seeds                         1 tsp
Onion                                   1 (medium)

FOR TEMPERING::
Mustard seeds                      1 tsp
Cumin seeds                        1 tsp
Urad dal                               1 tsp
Curry leaves                         1 sprig

PROCEDURE::
1) Cut the brinjal/egg plant into desired shape and place them in salted water.(this prevents the brinjal from blackening )
2) Grind coconut, green chilies, cumin seeds and onion into course mixture.
3) Heat oil in a pan. Then add the mustard seeds, cumin seeds, urad dal and curry leaves. 
4) Once  they splutter then add the brinjal pieces to it.
5) Saute for 5 minutes. Then add the sambar powder, turmeric powder, tamarind paste and salt.
6) Mix well . Let it cook until the raw smell of the coconut mixture leaves.(5-7 minutes)
Finally add chopped coriander leaves .


Serve with rice and sambar/rasam
