PALAK PANEER


INGREDIENTS:
Palak/Spinach                2 bunches
Paneer                            1cup
Green chillies                 4
Oil                                  3 tbsp
Jeera/cumin seeds          1 tsp
Garlic cloves                  2(finely chopped) 
Onion                             1 medium size      
Tomatoes                       3 (puree it)
Garam masala                1 tsp
Kasoori methi                1 tsp
Red chilly powder          1 tsp
Heavy whipping cream   3 tbsp 
Salt                                  as needed

PROCEDURE:
1) Cut the stems and chop spinach . Wash the chopped spinach and drain the water.
Cut the paneer into desired size.

2) Boil water and then add the palak/spinach in the water .Let it stand for 2 minutes.

3)Puree the spinach along with green chilies to a smooth paste.

4) This step is optional. Heat some oil in a pan fry paneer till golden brown to reduce the raw smell.
( My  son doesn't like the raw smell)
5)Heat oil in a pan then add the cumin seeds and garlic pieces to it.Saute until the garlic turns golden brown.Now add the onion pieces to it saute till golden brown.
6) Add the tomato pieces to it and cook till it becomes mushy.
Now add the red chilly powder, garam masala powder and kasoori methi to the tomato mixture.
7) Once oil separates from the tomato mixture then add the palak/spinach puree to it.
Cook till the raw smell leaves it around 5 minutes. The oil needs to separate from the gravy.
8) Now add the fried paneer to it . Add the whipped cream to it to have a rich consistency. 
Simmer till for 10 minutes. 
Turn off heat and serve with roti or paratha.
