VAMMU/AJWAIN RASAM


INGREDIENTS::
Tamarind                           lemon sized
Rasam powder                   11/2 tsp
Salt                                     as needed
Turmeric                            1 pinch


FOR TEMPERING:
Vammu/ Ajwain                1 tbsp
Mustard seeds                    1 tsp
Cumin seeds                      1 tsp
Garlic cloves                      2 
Onion                                 1 small
Red chilies                          3
Curry leaves                       1 sprig
sugar                                   1/2 tsp
Oil                                       2 tsp

PROCEDURE:
1) Soak the tamarind and then extract the juice from it.
2)Take  4 cups of water and then add the tamarind extract, rasam powder, turmeric powder and salt.
Just boil .

3) Heat oil in a pan . Add the mustard seeds once they splutter then add the cumin seeds, vammu/ajwain .
4)Crush the garlic cloves and red chilies in a mortar.
Add the crushed garlic , red chilly  and curry leaves to the tempering.
5)Finally add the pinch of sugar to enhance the flavor of the rasam.
6) Add the tempering to the boiling rasam and immediately close the lid so that the flavor of the tempering incorporates with the rasam. This is tiny little secret for yummy rasam.

SERVE WITH RICE
