SIMPLE EGG CURRY
INGREDIENTS:
Eggs 4
Onion 1(big)
Green chilies 3
Ginger-garlic paste 1 tbsp
Curry leaves 1 sprig
Tomatoes 4
Salt as needed
Red chilly powder 1 tbsp(adjust)
Coriander leaves few
Oil 1 tbsp
PROCEDURE:
1) Take water in a bowl then add eggs to them. Boil the eggs until the shells starts to crack.
Turn off heat and then drain water from eggs. Add cool water to them .Now crack the shells and keep aside.
2) Add salt and chilly powder to the boiled eggs.
Heat oil in a pan and then fry the eggs . The eggs should get some golden brown texture.
Take and keep aside.
2) Heat oil in a pan. Then add the chopped onions and green chilies to it.
Saute till the onions turn golden brown then add ginger-garlic paste.
Saute till raw smell leaves it.
3)Now add the chopped tomatoes, salt and red chilly powder.
Cover lid and let it cook till tomatoes mash up for 7-8 minutes.
4) Once tomatoes mush up add the fried eggs to it.
Add little water to it and cover the lid and cook for 8-10 minutes.
Check for salt and adjust.
Finally add the chopped coriander leaves.
Serve with rice or chapathi.
