BADUSHA



INGREDIENTS:
All purpose flour/ maida                       11/2 cup
Baking soda                                           1/4 tsp
Yogurt                                                    4 tbsp
Sugar                                                      2 cups
Milk                                                       2 tbsp
Ghee                                                      6 tbsp
Water                                                     1-2 tbsp
Oil                                                         for deep frying

FOR SUGAR SYRUP:
Sugar                                                     2 cups
Water                                                    1 cup


PROCEDURE:
1) Add baking soda to the all purpose flour/maida.
Now sieve them together for even mixing of them.

2) Add the melted ghee, yogurt  to the sieved flours. Rub the flour between your palms.
 Mix well.
Kneed it into dough. Don't be hard on the dough. 

3)Cover the dough and let it rest for 20 minutes.

4) Heat oil in a pan on medium flame.
In the meantime , add 1 cup water to 2 cups sugar.  Let it boil until the sugar dissolves.
It has to be one string consistency. (Pour a drop of syrup in a little water it should not dissolve in it )
Add lemon juice at the end it helps syrup from crystallizing .


5) Divide the dough into small balls . Press the ball into flat shape and using thumb press the center.
6) Place them into the oil . Reduce the flame to low flame. 
It will take 5-8 minutes for 1 batch to fry. 

7) Take them on to kitchen towel to soak the excess oil.
Transfer them into the sugar syrup. Let it stand for 7-8 minutes.


Add some chopped almond or pista on it.
