CARROT SOUP
I love soups specially in winters, soups are a savior. We don't drink tea or coffee in my home so we prefer having soups on cold winter evenings. I generally use the store brought soups .
It is very rare to make soups at home. Every once in a while i make these.
INGREDIENTS:
Carrot 2-3(large)
Onion 1(small)
Garlic cloves 2
Bay leaf 1
Whole pepper 6-7(adjust)
Pepper powder 1 tsp(optional)
Butter 1 tbsp
Salt as needed
Water 21/2-3 cups
PROCEDURE:
1) Chop carrots into small pieces.
2)Melt butter in a pan. Then add the bay leaf, garlic and onion.
3)Once the onion turns transparent then add the carrot pieces and whole pepper.
Fry carrots for 4-5 minutes.
Add 1 cup of water and cover the lid. Cook till the carrots become soft and water reduces (4 minutes)
Insert a knife to check the carrots if they are hard let them cook for few more minutes.
4) Once cooked take the bay leaf and strain water. Let them cool off .
Grind them into fine paste along .
5)Now take a pan add the fine paste ,bay leaf , 11/2 cup water and salt.
Mix well and let it simmer until desired consistency in medium flame( 4-5 minutes).
Add pepper powder and mix well.Turn it off.
Serve with crunchy bread crumbs.
