ONION CHUTNEY



     I like quick chutnies .Onion chutney is one of my family's  favorite . It tastes great with idly, dosa or vada. My mother makes it in two versions raw and fried versions. In the raw chutney she simply grinds the raw onion with some roasted chilies and garlic. Though the taste of it is good with some strong flavor of onion . We definitely have to use a mouth freshener  😉 after that. I posted the fried onion format. Frying the onion suppresses it's strong flavor and rawness. Hence giving it a sweet flavor.
                                   I rarely get the red onion at my place  😏 so i do the chutney with the yellow onion. Red onion gives some strong and spicy taste. Do try with red onion if you have them in hand.

INGREDIENTS:
Onions                             2(medium)
Red chilies                       4(adjust)
Garlic                               2
Tamarind                          small ball size
Jeera                                 1 tsp
Salt                                    as needed
Oil                                      1 tsp
FOR TEMPERING:
Oil                                     2 tsps
Mustard seeds                    1 tsp
Curry leaves                       2
Red chilly                           1 small

PROCEDURE:
1) Chop the onion.
2)Take oil in a pan. Add the onion and fry till it is transparent.
Remove  and cool them.

3) Now in the same pan add the jeera, garlic and red chilly saute for 1 minute.
Add it to the onion .

4)Once they are cool grind them with salt and tamarind.

5) Take oil in  a pan. Add the mustard seeds, once they splutter then add the red chilly and curry leaves. Fry for a min. Turn off the heat.

Once the tempering cools off then add it to the chutney.
