SWEET LASSI

                                                            Sweet lassi is the trademark summer coolant  of  India. Lassi the first summer drink I ever drank as of I remember. I remember my mom stocking the fridge with lassi and lemonades throughout my summer break. We use to play under the strong sun until we were completely tanned. Then return back home to cool down our souls with this cool lassi .  Though the Rasna and fruity exist in that era  , my mom insisted on lassi. After growing up I inclined more towards the spicy buttermilk.   Oh! I miss those good old childhood days. I think the most of the 90's kids have some beautiful stories woven around summer break . Unlike these newbies whose day revolve around the tricky gadgets.
                                       
                     
                      There are different varieties of lassi recipes . Sweet, spiced buttermilk , mango lassi , strawberry lassi . You name the fruit we can end up making yummy lassi with them.  The yogurt in the lassi has a unique quality to reduce the body heat.  Sweet lassi is a Punjabi recipe. They serve lassi in thick and creamy consistency. And the amount of lassi they serve is enormous.  My family prefer lassi in thin consistency. I enjoy crushed almonds and pistachios in my lassi.  So, make  lassi in your desired way and enjoy with malai(cream) .

INGREDIENTS:
Yogurt                                      2 cups
cold milk                                  1 cup
Sugar                                        1/2 cup
Cardamom powder                   1 tbsp
Saffron                                      a pinch
Ice cubes                                   5-6 (optional) 
Crushed nuts                             2 tbsp
(almonds,pistachios)

PROCEDURE:
1) Take thick yogurt in a bowl. Whisk the curd/yogurt until it is smooth texture .

2) Crush the cardamom into fine powder. 
Crush  almonds  and pistachios . 

3) Now add the sugar to the whisked  yogurt . Mix well until the sugar is dissolved into the yogurt/curd.
4) Now add the chilled milk  and whisk again until the lassi is very frothy.
5) Add the cardamom powder and saffron to it. 
Mix well.

6 ) Finally add  the lassi and ice cubes into the serving glasses . Add the chopped nuts  and serve . 

                                                                (or) 
1) Simply add yogurt/curd , milk/water  and sugar to a blender . Blend everything well into smooth and frothy texture . 
2) Then add the crushed cardamom powder and nuts . Serve lassi cold.
