FRUIT KESARI


INGREDIENTS::
Sooji                                    1 cup
Sugar                                   11/2-2 cup(adjust according to your taste)   
Ghee                                    1/4 cup
Apple                                  1/2 cup
Grapes                                 6-8
Cardamom powder              1 tsp
Food color                           1 pinch
Essence                                2 drops(optional)
Almonds                              4 (finely chopped)                             
Cashew nuts                        6-8

PROCEDURE::
Peel the skin of the fruits and then deseed them.
Add sugar to it and then let them stand for 30 minutes .

1) Melt ghee in a pan . Add the cashew nuts and raisins. 
Fry until the raisins are fully bloated. 

2)Now add the sooji/semolina slowly making sure it doesn't form lumps.
Roast until the golden color and raw smell leaves the sooji/semolina . 

3) Now add the sugar to the roasted sooji to it. 
Mix well.


4)Now add the water to the sooji . Add salt to it and then mix well.
Cover the lid and then cook for 2 minutes.
Add the chopped fruits and food color .

5)Now add the food color to the sooji mixture. Mix well and the cover the lid.
Cook until the kesari leaves the edges and turn off the heat.
Let it set.
 Garnish with chopped almonds and serve hot.


**We can use any other fruits like pineapple.
