BOBBATLU/ PURAN POLI


INGREDIENTS::

For Dough::
Maida                             1 cup
Turmeric powder           a pinch
Ghee                               1-2 tsp(melted)
Oil                                   1/3 cup or 5 tbsp

Water                              as needed
Salt                                 a pinch
For Filling::
Chana dal                       1 cup
Jaggery                           1 cup(grated)
Fresh coconut                 2 tbsp
Cardamom powder         1 tsp
Salt                                  a pinch
Ghee                                1 tsp  

PROCEDURE::
FILLING:;
1)Wash and soak the chana dal in water for 1 hour.

2)Boil water in a pan and then add the soaked chana dal into it.
Cook till the dal gets cooked , it should not be mushy. Dal must hold its shape .
Press the dal in between your  thumb and index finger , if it gets smashed it is cooked or else let it cook for some more time.

3)Shred the coconut. Now add jaggery, coconut, boiled chana dal , cardamom powder and grind it.
5)Mix a pinch of salt and ghee to the mixture.Make balls out of the chana jaggery mixture. Keep aside.
If the chana jaggery mixture is in watery consistency then place it in a pan and then let it cook until all the moisture leaves it. The consistency should be tight. (mine was thick when i did the grinding, so i din't  place it on the stove.) This step is always optional.

DOUGH::
6)Take maida/all purpose flour, ghee, turmeric ,salt . Using your palms rub the  flour mixture well so that the ingredients mix well.
Add water to it . Knead it into soft dough. The dough should be very soft and loose . Beat the dough with fist.(doing so gives it a softer texture) If the dough is not soft the bobbatlu/ puran poli outer cover will be hard. 

7)Pour the melted ghee/clarified butter on it and cover the dough . Let it stand for 1 hour to 2 hours.

8)After 2 hours pour the excess oil out and then knead the dough again.
Make small balls out of the dough. The dough ball size should be half of the size of the chana jaggery balls.


9) Place a plastic sheet on the kitchen counter and the place the dough ball on it.
Add little oil to it and then using your finger spread the balls into a small circle.
Now place the chana jaggery ball in the center of the dough circle.

10) Now using your fingers press the dough ball into a flat circle by slowly applying oil over the ball and spreading it. 
Heat a dosa tawa and then spread some ghee on it .
Now place the bobbatlu/puran poli on it . Once the side is cooked turn it to the other side and apply some ghee on it. Once both sides are done keep it aside.

Serve warm.
