KALAKAND(microwave version)
INGREDIENTS::
Ricotta cheese 1 can(15 oz)
Condensed milk 1 can(14 oz)
Rose water 1/4 tsp
Cardamom powder 1/2 tsp
Almonds few (shredded for decoration)
Pistachios few( cut for decoration)
PROCEDURE::
1)Mix the ricotta cheese well.
2) Now place the mixture in microwave for 6 minutes uncovered.
Take it out and mix well again to avoid the lumps and for even cooking.
3)Again microwave for 2 more minutes uncovered.
Take it out and mix well .
4)Cover the bowl and then microwave it for 2 minutes.
Place a microwave safe lid.
Take out the lid making sure not to drop the moisture into the mixture. Mix well again making sure to mix evenly. Clear the edges of the bowl .
5)Cover the bowl again with lid semi closed and microwave for 2 minutes .
Take and mix well.
6)Keep microwaving for 6 minutes stiring in between after every 2 minutes.
After 2 mins:
We see that the consistancy is changing.
After 2 more minutes:
Last 2 more minutes::
Mix well after every 2 minutes making sure to evenly cooked.
After 6 minutes mix well thoroughly.
Finally the mixture leaves the edges.
7) Add the cardamom powder, rose water to it mix again .
Chop the almonds and pistachios.
8)Now grease a tray with little ghee/butter and then add the mixture to it .
Level the mixture evenly. Let it set down for 1 hour until it cools down.
Place it in refrigerator ,it will settle down quickly.
9)Sprinkle all the chopped nuts on to them. Once it is cooled a bit then cut them into squares(or any desired shapes)
The most delicious KALAKAND is ready within few minutes.
