NAN KHATAI
INGREDIENTS::
Whole wheat flour 3/4 cup
Maida/All purpose flour 1/4 cup
Sugar 1/2 cup
Cashew nuts 7-8
Baking powder 1 pinch
Ghee Less than 1/2 cup
Cardamom/Elachi 1
PROCEDURE::
1)Grind sugar along with elachi/cardamom into fine powder.
2)Now crush the cashew nuts into pieces.
3)Now combine maida, whole wheat flour ,sugar and baking powder in a bowl.
Rub the flour well so that they mix well.
Preheat the oven at 375 deg F or 190 deg C.
4)Now add ghee slowly mixing well. Mix the flours to make a dough. Make the dough only with ghee water should not be added. Add the 1/2 cup of ghee.
5) Grease the baking tray with ghee and then sprinkle some flour on to the tray.
6)Now make small balls out of the dough and then place them on the greased try.
Flatten them a bit with your fingers. Now prick the dough with fork or make your desired patterns.
7)Place the tray in the oven and bake for 13-15 minutes.
If you are making in bulk the second bunch of nan khatai should be checked in between. By doing so we can prevent them from burning.
