VEGGIE PINWHEEL SANDWICH

                                         School days are always tiring for my little one. Snehith always brings his lunch box half done with sweet excuse of time . But I wonder 😉 how he has enough time for noodles. So, I always insist him on having some evening snack where I try to sneak in some veggies . Pinwheel sandwiches are a perfect fit to all the requirements. Snehith never says no to them, he loves them so much.  Though I made it a zillion times I always end up with an empty plate by the time I decide to take a picture of it. So, today I made it couple of hours before snehith was back from school. He runs away from nuts 😞 especially from almonds . So, I crush the almonds and sprinkle in between the sandwiches. Use your imagination and sneak in all the healthy stuff into the sandwiches. 
                                         



                                                          I first had the pinwheel sandwiches which are made with the tortillas. We can make it with sour cream , mayonnaise or mustard spread. I had these turkey sandwiches but never tried the veggie version of them. I saw this version of sandwiches with bread from here . Actual recipe called for some tomato ketchup but i like to use some sweet chutney in its place as this will enhance the taste of the veggies and my kid loves the sweet chutney 😍version. Write down the ingredients and jump into your aprons. Simply wait for hugs and kisses from your little ones.
                                                 


INGREDIENTS:
White bread/ Sandwich bread                           6
Butter                                                                 1 tsp
Green chutney                                                   1 tsp
Sweet chutney                                                   1 tsp
Crushed almonds                                               2 tbsp
Cheese slices                                                     2
Carrot                                                                l/4 cup grated
Cabbage/ lettuce                                               2 tbsp( grated)
Pepper powder                                                 1/4 tsp

































PROCEDURE:
1 ) Trim the edges of the bread slices. Roll them  flat using a pin roller into  thin slices.

2)  Grate the carrot and cut the cabbage into juliennes.

3) Now apply the green chutney on one slice , sweet chutney on second slice and butter on the third slice.
4) Place them one on the other . Place a cheese slice in between slices.

5)Take little amount of  carrot and cabbage juliennes on the bread slices. Add the crushed almonds on them. ( it is totally optional)  Sprinkle some salt and pepper on to it. Align the bread slices and roll them tightly  holding the three slices.

6) Cut them into 1 inch pieces  or simply serve as it is.

For best results wrap the sandwich in a clingwrap and put in refrigerator for 30 minutes (this process will hold the sandwich better) . Remove the plastic wrap and cut them into desired shapes.
