CORN AND SPINACH SALAD
A completely different salad with flavor blends. The sweetness of corn, spice of chilly, sourness of lemon combined with earthy flavor from spinach gives unique flavor to the salad.i found this recipe in the Pillsbury website. The original recipe added mushrooms but i am not a big fan of them so i omitted. I made little adjustment to the flavors according to my taste buds.I gave it a try and it tasted good.
I am the only person who likes salads in my home 😏 . Generally I prefer to make cucumber or radish salad. I have very little corn left so i was looking for some salad recipes. I make salad with spinach , onion and cheese with vinaigrette dressing. I wanted to try something new. I made half the quantity i mentioned in the measurements.
INGREDIENTS:
Corn 1 cup
Baby Spinach 1 small bunch
Coriander leaves 2 tbsp(chopped)
Onion 1/4 no.
Red/green chilly 1
bell pepper 2 tbsp (chopped)
Mushroom 1/2 cup (optional)
FOR DRESSING:
Chilly powder 1 tsp
Salt as needed
Grated ginger 1/2 tsp
Oil 2 tbsp
Lemon juice 1 tbsp
Sugar 1 tsp
PROCEDURE:
1) Separate corn from cob. If using frozen corn , microwave it for 30 seconds.
2) Wash the spinach leaves and chop it into pieces. Chop onion, chilly, coriander leaves.
Grate the ginger. Squeeze the lemon juice.
3) Mix all the dressing items together.
Now add the remaining ingredients to it. Toss well.
Serve immediately or refrigerate it covered.
