OATS VEGETABLE SOUP

                                           
                                Oats vegetable soup is perfect for weight-loss and it is also diabetic friendly. Oats have low glycemic index, it can help maintain low glucose levels.  There is always a myth among most of the people i know  that oats recipes are not that tasty . Try this soup  😋 you will change your view. Oats cooked with milk gives a rich creamy taste and texture. I make upma , dosa, idly , kichidi with oats.
                                I used milk in this soup if you are making this for weight loss then reduce the milk quantity or use fat free milk. Oats become sticky upon cooking so i prefer dry roasting them before cooking.



INGREDIENTS:
Oats                                      1/4 cup
Mixed vegetables                 1 cup              
Onion                                   1 small
Garlic                                   1 flake
Bay leaf                                1
Milk                                     1 cup
Water                                   1-1 1/2 cups
Black pepper powder          1 tsp(adjust)
Salt                                      as needed

PROCEDURE:
1)Chop onion, garlic and vegetables.
Crush pepper.
2)Take oil in a pan. Add bay leaf and  onion, saute until it turns transparent .
Now add the garlic clove. Saute for 30 seconds.

3)Now add the mixed vegetables to it. Fry for 4-5 minutes.
Once they are cooked then add the oats.
4) Fry the oats until rawness leaves . The oats change color.(2 minutes)

5) Now add the water and let them cook for 4 minutes(approx).

6) Once the oats are cooked then add the milk and cook until 1 boil.
Finally add the pepper powder and salt. 

Mix well and let it simmer for 2 more minutes it will thicken.
Turn off the heat and serve immediately.
