ARITIKAYA/RAW PLANTAIN FRY


INGREDIENTS::
Aritikaya/Raw plantain                        1(big)or 2 small
Salt                                                     as needed
Onion                                                  1(chopped lengthwise)
Garlic cloves                                       3(chopped lengthwise)
Turmeric                                             1/4 tsp
Oil                                                      2 tsp

FOR TEMPERING::
Mustard seeds                                   1 tsp
Cumin seeds                                      1 tsp
Chana dal/Chenaga pappu                 2 tsp
Urad dal/Minapappu                           1 tsp
Red chilies                                         3(adjust)
Curry leaves                                      1 sprig

PROCEDURE::


1)Cut the aritikaya /raw plantain into circles.Now put the pieces into water immediately to prevent them from blackening.
Now boil some water and then place the pieces in it ,add salt .Cook for 5-8 minutes.
Strain the water from them and keep aside.
2)Now heat oil in a pan, add the mustard seeds let them splutter.
Add the cumin seeds , chana dal and urad dal ,Saute for 1 minute.Now add the garlic cloves, onions and let them turn transparent.


3)Add the turmeric powder, red chilies and curry leaves.
Fry for a minute.
4)Now finally add the  boiled pieces to the tempering. Cover the lid and then cook for 2 minutes.
Fry for 5-7 minutes making sure not to mash the veggie.
Turn off heat.
