CAULIFLOWER POTATO CURRY
INGREDIENTS::
Cauliflower 1 medium
Potatoes 2 (cubed )
Onion 1 (chopped)
Green chilies 3
Ginger-garlic paste 1 tsp
Coriander powder 1 tsp
Chilly powder 1 tsp
Coriander leaves few(for garnishing)
Salt as needed
Oil 2 tsp
PROCEDURE::
1) Separate the cauliflower into florets.
Peel and cut the potatoes into cubes.
Parboil the potatoes (70% cooked) and keep aside.
2) Heat oil in a pan, add the mustard seeds once they splutter add the cumin seeds.
Add the onion and green chilies.
3)When the onion turns transparent then add the ginger-garlic paste. Saute until the raw smell leaves the paste.
4)Add the chopped tomatoes and salt to it. Cover the lid and cook till they turn mushy.
5)Add the cauliflower florets to the tomato mixture. Fry until the cauliflower get cooked.(5 mins approx.) Add the chilly powder and coriander powder to it.
6) Once the cauliflower florets cooks well then add the par boiled potatoes to it.
Add a little water(1/4 cup) to curry . Cover the lid and let it cook in medium flame until the water is absorbed . Finally add chopped coriander leaves.
Serve as a side dish for chapathi or rice.
