TOMATO RICE


INGREDIENTS::
Cooked rice                             1 cup
Garlic cloves                           6-7
Ginger                                     1 tbs(chopped)
Cashew nuts                            8-10

Green chilies                           4
Coriander leaves                     few
Chilly powder                         1/2 tsp(adjust according to spice level)
Salt                                         as needed
Tomatoes                                4  medium(cut into fine pieces)
Turmeric powder                     1/4 tsp

FOR TEMPERING::
Oil                                            3 tbsp
Mustard seeds                          1 tsp
Cumin seeds                            1 tsp
Chana dal                                1 tsp
Urad dal                                  1 tsp
Curry leaves                            1 sprig


PROCEDURE::
1)Wash and  soak  basamati rice for 30 minutes.
After the rice gets soaked then cook it with 3 cups of water.
2)Heat oil in a pan. Add the mustard seeds, once they splutter then add the cumin seeds, urad dal and chana dal. Saute until chana dal  turns golden color. Add the cashew nuts.
3)Now add the garlic and ginger . Saute until the garlic turns golden color,now add the onion, curry leaves and green chilies. Fry till the onions turn into transparent.
4) Now add the chopped tomatoes and salt to it.  Cook till they become mushy. 
Add the chilly powder and turmeric powder.

5)Now add the cooked  rice to the tomato mixture, combine well and check for salt.
Let it cook for 10 minutes on medium flame. 

Finally add the coriander leaves to it.
Turn off and serve hot..
