BENDAKAYA PULUSU
INGREDIENTS::
Bendakayalu/Okra 250 gms(cut into 11/2" piece and pat dried)
Onion 1( big)
Green chilies 2
Tomato 1(big)
Tamarind small lemon size( soak in water)
Oil 1 tsp
Water 2-3 cups
Turmeric powder 1 pinch
Chilly powder 1 tsp
Salt as needed
Coriander leaves 1 tsp(for garnish)
FOR TEMPERING::
Mustard seeds 1 tsp
Cumin seeds 1 tsp
Methi seeds 1/2 tsp
Curry leaves 1 sprig
PROCEDURE::
1)Heat oil in a pan. Add the mustard seeds and once they splutter , add the methi seeds, cumin and curry leaves.
Add onion
2)Once the onions and green chilies turn transparent then add the okra/bendakayalu to it.
Let them fry until the stickiness reduces and the bendakayalu turn golden brown.(10-12 minutes)
3)Now add the tomatoes, salt and cook till the tomatoes become mushy for about 4-5 minutes.
Then add the turmeric powder and chilly powder.
4)Add the tamarind extract and water , let it boil for 10 minutes. Cover the lid and cook in low flame.
Turn off the heat once the gravy gets a bit thicken.
5) Serve with coriander leaves
SERVE WITH STEAMED RICE.
