LEMON BARS


INGREDIENTS::
For the Crust:
Butter                                2 sticks
Granulated Sugar                1/2 cup
All Purpose Flour                2 cups 
Salt                                    1/8 tsp

For the Filling::
Eggs                                  6(at room temperature)
GranulatedSugar                  3 cups
Lemon Zest                         2 tblsp(4-6 lemons)

Lemon juice                         1 cup(freshly squeezed)
Flour(maida)                        1 cup           
Confectioner Sugar               For dusting

PROCEDURE::

Preheat the oven to 350 degree F.
For Crush::
1)Cream the butter and sugar until soft.
2)Now add the flour and salt . Mix well until there are no lumps and mix well with the butter.
3)Now dust a plate and make a fine ball of the dough.
4)Now flour your hands and then spread the dough on to 9 by 13 by 2 baking sheet. Make a 
1/2 inch edge on all sides.
5)Put this in refrigerator for 10 minutes.Let it chill.
6)Now bake the crust for 15 -20 minutes until it turns golden brown. Take it out and cool it down.
Leave the oven on.
   


For Filling::
1)Whisk the eggs then add the lemon juice, sugar , flour and lemon zest . Mix well to avoid lumps and let everything mix well.
2)Pour the mixture on the baked crust and bake for 30-35 minutes until the filling is set.
Let cool to room temperature.
3)Dust with sugar and cut into triangles or squares.(cut only when it is completely cooled else it will break and you cannot get fine shapes.)
