MAIDA BURFI
INGREDIENTS::
Maida/All purpose flour 1/2+1/2 cup
Sugar 1+1 cup
Ghee/butter 1/4+1/4 cup
Cashew nuts 10-12
Water for sugar syrup
Vanilla essence 5-6 drops
Food color a pinch
(green and pink)
PROCEDURE::
1)Grease a pan and keep aside.
Now slowly add the maida and fry in low flame. Maida should fry evenly and keep aside.
Now divide the maida into two parts(1/2 cup +1/2 cup).

(ghee should be hot enough before we add the flour, we can check it by adding little flour to it.It should get fried immediately)
3)Now in a heavy bottom pan add 1 cup of sugar then add little water just enough to immerse it, boil to 1 string consistency.Add the green food color ,vanilla essence and turn off the heat.
Now add the fried maida to it.Mix well.
Repeat the same process with pink color. (add the pink color to the sugar syrup which is 1 string consistency).
4)Spread on the greased plate evenly (my burfi was not even hehe , i was in a hurry :)).
Once the pink mixture is ready spread on the green mixture.
5)When it is a bit warm cut them into desired shape and let it cool down completely.
Then transfer the burfi to another plate and store in air tight container.
