SAMBAR




INGREDIENTS::
Toor dal/Kandipappu               1 cup
Brinjal                                       2
Okra                                         4
Drumstick                                  1
Onion                                        1 medium
Garlic cloves                              3
Sambar powder                       2 tsp
Salt                                         as required
Tomato                                 1 medium
Tamarind                              1 small lemon size
Turmeric                               1 tsp

FOR TEMPERING::
Mustard seeds                      1 tsp
Cumin seeds                         1 tsp
Red chilies                            2
Sugar                                    1/2 tsp
Asefotide                              1 pinch
Grated coconut                      1/4 cup(Optional)
Curry leaves                          1 sprig
Coriander leaves                    1/4 cup
Oil                                         2 tsp

PROCEDURE::
1) Cook the dal  in the pressure cooker until it is smooth for 3 whistles.
Cut all the vegetables and keep aside.

2)Soak tamarind in hot water and squeeze the extract.
 3)Now take a pan add the vegetables to it and cook them until they are soft .
Now take the cooked dal in a thick vessel and add the cooked vegetables also.
Once the vegetables are cooked then add the tamarind extract to it.
4)Now add the sambar powder, salt and chilly powder to the dal-vegetable mixture and let it boil well for 10-15 minutes.

5)Now in a pan add the oil and when hot add the mustard seeds and once they splutter add the cumin seeds, garlic, onion and red chilies.
6)Once the onion turn transparent then add the red chilies and curry leaves .

7)Now add the asefotide ,sugar,grated coconut and coriander leaves to the tempering .
8)Now add the tempering to the dal- vegetable mixture.And close the lid so that the flavor of the tempering doesn't get lost.

                SERVE WITH RICE OR IDLI
