ALOO BONDA


INGREDIENTS::
Potatoes(boiled and mashed)                 4
Onion                                                 1/2 (small)
Mustard seeds                                     1 tsp
Cumin seeds                                       1 tsp 
Ginger(finely chopped)                         1 tsp
Red chilly powder                                1 tsp
Coriander leaves                                  few(2 tsp)
Chopped green chilies                           1 
Turmeric powder                                 1/2 tsp
Salt                                                     as needed
FOR BATTER
Besan                                                  2 cups
Baking soda                                          1/4 tsp
Rice flour                                            2 tbsp
Ajwain/carrom seeds                            1 tsp
Red chilly powder                              1 tsp
Salt                                                     as needed
Oil                                                      for deep frying

PROCEDURE::
1) Boil potatoes . Peel the skin and mash them .
2)Heat 1 tsp of oil then add the mustard seeds, cumin seeds, onion, ginger and green chilies.
Saute until the onion turns transparent (approx 1 min).
3)Now add the turmeric powder, chilly powder and salt.Mix well.
4)Now add the mashed potatoes to it. saute for 2-3 minutes.Let it cool down a bit.
Make small balls out of it.
5)Now combine besan, salt, red chilly powder and baking soda. Add water little by little in pakodi batter consistency.


6)Dip the dumplings in the batter and then drop them into oil.(be careful).

7)Fry in medium heat until they turn  golden brown.
   
Take them onto a kitchen towel to drain the excess oil. 

          Serve with green / sweet chutney.
