PALAK RICE
INGREDIENTS::
FOR PASTE:
Cumin seeds 1/2 tsp
Cloves 4
Chana dal 1/2 tsp
Cinnamon stick 1/2 inch
Spinach/Palak 1 bunch(11/2 cup chopped)
Onion 1/2 onion
Garlic cloves 3
Ginger 1/2 inch
Rice 2 cups
Ghee 11/2 tsp
Bay leaf 1
Cashew nuts 6
PROCEDURE::
1)Soak the washed rice for 15-20 minutes.In the mean time prepare the rest of the process.
2)Dry roast the cumin seeds, cloves, chana dal and cinnamon stick for 1-2 minutes until nice aroma comes out of it.Turn off and cool down.
Now cut the onion , peel garlic and ginger.
2)Make a paste of all the spices, palak,onion ,ginger and garlic.
3)Now heat ghee in a thick bottom pan. Add the bay leaf, then add the paste to it and cook until it changes its color from light green to dark and all the oil separates from the mixture.
4)Now add the soaked rice to it. Saute for 1 minute .
Then add the water and salt .
Cover the lid and let it cook on medium low until the rice is cooked.
