BRINJAL BAJJI
INGREDIENTS::
Brinjal 1(big) slit length wise
Besan 1 cup
Salt as needed
Red chilly powder 1 tsp
Ajwain/Vammu 1/2 tsp
Rice flour 2 tsp
Oil for deep frying
Onion 1 medium (finely chopped)
Coriander leaves 2 tsp(finely chopped)
Lemon juice 1/2 lemon
Red chilly powder 1/4 tsp
Salt as needed
PROCEDURE::
1)Cut the brinjal length wise and then place in water(to avoid browning of the brinjal)
2)Mix besan,salt,red chilly powder,baking soda,rice flour and ajwain.
Add water and then mix well to avoid lumps.
3)Heat oil in a pan. And then reduce the flame to medium.
4)Now dip the brinjal pieces in the batter and then drop them in the pan.(Make sure not to burn your fingers.)
Turn to the other side once it is done . Fry them on both sides until golden brown.
Take them on to a kitchen towel to drain the excess oil from the bajji.
Always fry the bajji on medium flame to make sure it gets cooked inside.
5)Mix all the ingredients under filling and then stuff them into the bajji.
SERVE WITH SAUCE.
