ATUKULU/POHA MIXTURE





INGREDIENTS::
Poha/Atukulu                          2 cups
Peanuts                                  2 tsp
Cashew nuts                           8-10
Raisins                                   few
Curry leaves                           1 sprig
Bengal gram                           2 tsp
Turmeric powder                    1/4 tsp
Red chilly powder                   1/2 tsp(adjust accordingly)
Lemon juice(optional)              1 tsp
Salt                                        as needed
Oil                                         as required

PROCEDURE::
1)In a microwave safe bowl add poha/atukulu and oil mix well.Microwave for 1 minute and then mix well.
Again microwave for 2 minutes tossing in between after every 30 sec interval.
Take the atukulu/poha  out of the microwave and let it cool down. Make sure they are crisp and crunchy.




If doing on stove take a pan add oil for deep frying once oil is hot add the atukulu/poha and fry until it they are crisp take them out on kitchen towel to absorb excess oil.(make sure to do in medium flame)
2)Now heat oil in a pan add the peanuts. Fry until they turn golden brown.Take them on the paper towel.
3)Similarly do for the cashew nuts. Fry raisins until they increase in size.Keep aside.
4)Now fry the curry leaves until crisp. Keep aside.
Fry the bengal gram and keep aside.(don't brown them)
5)Now combine the poha/atukulu , cashewnuts, raisins , peanuts, curry leaves, red chilly powder, salt and turmeric.


If you wish to we can add the lemon juice.
