QUINOA UPMA
INGREDIENTS::
Quinoa 1 cup
Salt as needed
Oil 1 tsp
Carrot 1 (finely chopped)
Capsicum 1/4 cup(finely chopped)
Green chilies 4
Onion 1 medium(finely chopped)
Curry leaves 1 sprig
Water 2 cups
FOR TEMPERING::
Mustard seeds 1/4 tsp
Cumin seeds 1/4 tsp
Chana dal 1/4 tsp
Urad dal 1/4 tsp
PROCEDURE::
1)Place 1 cup quinoa and 2 cups water in a 11/2 quart saucepan and bring to a boil.
Reduce to simmer, cover and cook until all water is absorbed(10-15 mins).
When done, the grains appears soft and translucent.
2) Heat oil in a pan. Add the mustard seeds let them splutter add the cumin seeds, chana dal and urad dal. Saute for 1 minute.
3)Add onion fry until transparent then add the carrot, capsicum , green chilies and curry leaves. Saute until carrot and capsicum get cooked.
4)Add the cooked quinoa, salt to it . Cover and cook for 3-4 minutes.
Turn off heat.
