BOONDI CURRY
Weekends are very lazy. Its like somebody has to drag me to kitchen. Late morning breakfasts followed by late lunch .So I always prefer to make a quick curry or one pot meal.
Boondi curry is one of them --No chopping , less time in cooking . And most importantly my family loves it. My hubby is a big fan of this curry.
My mom used to make this curry when she ran out of vegetables. Saute onions with green chilies. Then let tomatoes mush up. Finally add the boondi turn off . Done curry is over.
INGREDIENTS::
Onion 1 medium
Green chilies 3
Tomatoes 2
Red chilly powder 1 tsp
Ginger-garlic paste 1/2 tsp
Boondi 1 cup
Salt as needed
Oil 1 tsp
FOR TEMPERING::
Mustard seeds 1/2 tsp
Cumin seeds 1/2 tsp
Curry leaves 1 sprig
PROCEDURE::
1)Take oil in a pan, then add the mustard seeds once they splutter then add the cumin seeds .
2)Now add the onion ,green chilies and let them turn transparent.Add the curry leaves and ginger-garlic paste saute until the raw smell goes away.
Then add the tomatoes and let them turn mushy.
Now add water and let it boil. Let it cook for 5 minutes.Add the coriander leaves.
Boondi will absorb all the water in the gravy.
SERVE WITH RICE
